Herb - French Tarragon The French Tarragon, 'Artemesia dranunculus sativa', cannot be easily purchased. To obtain French Tarragon, you need to obtain plants or to use cuttings. French Tarragon has a spicy anise flavor that turns ordinary main dishes into masterpieces. Tarragon goes well with meat and vegetables and is a top choice in any hearty recipe. This herb reveryes a height of 2 feet with an 18 inch spread. To use Tarragon in cooking, chop the leaves very fine to extract the flavor for cream sauces and b?arnaise sauce. Add it to tuna or chicken salads, eggs and quiches, mayonnaises, and mustard salad dressings. It makes a wonderful flavored butter and can be combined with dill and parsley for fish. Protect your tarragon from harsh winters by mulching with shredded bark. Cut the plant back to the ground in spring, remove dead stems, and trim to shape. The plant also should be divided every 3 to 4 years. French Tarragon likes life on the dry side with plenty of sun. The soil should be well drained and watering should be thorough. Keep a good supply of fresh tips for cooking by cutting it back to the ground several times during the growing season. Herb - Golden Sage The Golden Sage, 'Salvia officinalis aurea', has beautiful golden variegated leaves. Golden Sage is an ideal plant for color contrast in the home landscape. The leaves of sage have a sharp, peppery taste. Use Golden Sage to flavor sausage, soups, dressings, cheese dishes, and stuffings. Sage tea is also worth a try. It may not keep you young forever, but it will help control winter sniffles. Culinary sages make great additions to the border garden. Cut back at the end of winter to remove woody stems and promote new growth. Golden Sage has a flavor that is very assertive and very valuable as a digestive aid in many dishes, particularly those relatively high in fat such as pork, veal, duck, and cheese. Sage is also great with carrots, tomatoes, squash, corn and potatoes. Herb - Lady Lavender The Lady Lavender, 'Lavandula angustifolia 'Lady', is faster growing than other varieties and has a great scent and beautiful blooms. Lady Lavender is a dwarf cultivar of Lavandula angustifolia. Lady Lavender is a 12" plant with compact violet blooms on 4-6" stems. Shear following bloom for shape and to prompte rebloom. The Lady Lavender blooms first year from seed, and will set viable seed. Remove spent blooms to extend bloom season. The Lavender blooms in late spring and into the summer. It also the characteristic square stems of the mint family. The Lady Lavender prefers full sun and loose. light, well drained soil. Do not fertilize, over rich soil will cause the plant to be less fragrant. Plant in early spring, as soon as the soil can be worked or in late fall. Herb - Lemon Grass The Lemon Grass, Cymbopogon citratus, is a very fragrant grass and it is a versatile performer in the kitchen where it can be used in teas, beverages, herbal medicines, and Eastern inspired soups and other dishes. The leaves of this plant are used for many medicinal purposes. They can be dried and used in the making of Vietnamese and Thai curries. This tropical grass grows in dense clumps that can grow to 6 ft in height. The straplike leaves have gracefully drooping tips. The evergreen leaves are bright bluish-green and release a citrus aroma when crushed. It is the leaves that are used as flavoring and in medicine. They are steam distilled to extract lemongrass oil, an old standby in the the perfumer's palette of scents. Gardeners in subtropical areas will enjoy using lemongrass in beds and borders. It also does well in tubs and containers. If you live in a frosty area, you can enjoy it as an annual. Herb - Greek Oregano The Greek Oregano, 'Origanum vulgare hirtum', is a more prostrate and more highly scented than Italian oregano. Greek Oregano blooms readily in the second year. Origanum vulgaris hirtum is the true Greek Oregano with flavor so intense it numbs the end of your tongue when fresh, and like all culinary oreganos, the flower of Greek Oregano is white. Plant in well drained soil will help during periods of excessive rain, and raised beds filled with organic topsoil and compost are good for this plant also. Like most herbs, six hours of sun is preferable to fully develop those mouth watering flavors. In hot summer areas, afternoon shade can cut down on watering and stress to the plant. And mulching is always a good practice to improve the soil and help keep root zone temperatures moderate. Greek Oregano has a strong flavor but it doesn't hold up well to prolonged cooking, especially when used fresh. Harvest fresh leaves right before you are going to use them. Pick several kinds of cooking herbs and make a culinary bouquet. Greek Oregano chopped and mixed with garlic, salt, and olive oil makes a great marinade for pork, beef, or roasted potatoes.
